Separate the egg whites from the yolks, and put in separate bowls. Whist up the egg whites until light, fluffy and able to peak. Blend the oats up in a blender until smooth and fine. Mix the egg yolks, yogurt, sweetener and vanilla extract. Fold in the egg whites and stir to form the pancake batter.. Add your oats to a blender and blitz until you have a fine powder. In a mixing bowl, combine the oat flour, two of the eggs, the yogurt, vanilla essence, baking powder and sweetener and whisk until smooth. Whisk in the last two eggs until the mixture is super smooth. Leave to sit for 10-15 minutes to thicken.
